For thousands of years the use of fermented milk as “cultural food” has been well documented. Many excellent products (Kefir, Skyr, Kumiss and Naja) to name a few have appeared in regions ranging from Turkey and the Caucasus to India and East Asia.

Although these fermented products were distinguished by regional and cultural differences, they were highly prized both for their preservation properties (fermentation allows milk to be preserved in a number of forms) and for their beneficial effects on the body.

Phosphatidylserine:

Phospholipids (lipid fractions) are:

  • naturally found in many vegetable organisms (soy, colza, sunflower), and in animals.

There are many types of phospholipids, of which the most important are phosphatidylcholine (PC) and phosphatidylserine (PS).

Phosphatidylserine (PS) plays a crucial role in the brain function; it is involved in the acetylcholine synthesis (a neuro-transmitter whose deficit can trigger Alzheimer disorder). PS also intervenes indirectly in the synaptic function, allowing the production of more and stable new connections: the result is a better memory in the long-run and a better neuronal transmission.

Several clinical studies (more than 14 serious studies undertaken since 1986) have shown the capacity of PS to delay the appearance of memory troubles linked to age.

Using PS several minutes before stress helps decrease the hormonal response that causes physical tension.

Fish oil rich in EPA and DHA:
Cold sea fish oil (such as salmon and mackerel) are especially rich in essential fatty acids belonging to the Omega-3 family, namely DHAand EPA.

DHA (decosahexaenoic acid) is a major component of nerve cells and neural sheathing (20% of the fatty mass of the cerebral cortex is composed of DHA).

It plays a major role in the maintenance of cellular membrane fluidity in the brain because it participates in the formation of the phospholipidic layer of these membranes.

It also aids the proper functioning of the membranes' receptors, enzymes and nervous transmission, which contributes to a better memory.

Omega-3 fatty acids also play an anti-oxidizing role in synergy with the selenium, vitamin E and zinc.
In addition, an increase of DHA leads to a decrease in aggressiveness and stress response.

Alkylglycerols:

Natural vitamin E:
It is used for its anti-oxidizing function, protecting fatty acids from oxidation. It protects cellular membranes in much the same way as does grape extract.
